SMASHED POTATOES

SMASHED POTATOES
Ingredients
baby potatoes
½ teaspoon kosher salt divided
½ teaspoon olive oil
1 tablespoon salted butter melted
¼ teaspoon coarsely ground black pepper
grated cheese
Steps
Scrub the potatoes and rinse under cool running water. Place potatoes in a 2-quart saucepan. Fill the pot with water until the potatoes are completely covered by water. Add ¼ teaspoon of the salt.
Bring to a boil over medium high heat and cook until potatoes are tender, about 15 minutes . You can test to see if the potatoes are done by gently piercing with a fork. Drain in a colander and let cool for 5 minutes.
Place the potatoes on a baking sheet; or in the air fryer. at 400° for Air fryer or on a cookie sheet in the oven at 425° Drizzle olive oil over the potatoes and mix with your hands to make sure all sides of the potatoes are covered with oil.
Using the bottom of a small drinking glass or use a potato masher, gently press down on the potatoes to smash them into flat patties.
Drizzle the melted butter over the potatoes, top with the remaining salt, pepper, and cheese. Or any combination of what you have on hand.
Bake until the bottoms of the potatoes are crisp and the tops are golden, about 20 minutes. Serve hot.
Notes
Add your favorite condiments ie: sour cream, guacamole, bacon, different cheeses Your choice

Wow, Karen, that sounds super yummy, and I do like my potatoes.

And. . . is your neighbor's place on Zillow? The chances of me moving are probably slim to none - but I still like to know what's "out there". :lol:

My son might like this. I'll try it when replacement air fryer from recall arrives. I'd probably double the salt !

was the time for baking in the oven or for the A/F? I've seen different people post that they made potatoes this way sounds really good going to have to try it

I don’t often cook — or eat :lol: because I don’t like anything, but these potatoes sound like something I would enjoy. Will definitely try them. Thank you Karen.
