I made one of these cakes today, and it was so good!!!
I was already thinking of variations, like cinnamon and applesauce, mmm
I took pics but can't seem to get photobucket to cooperate tonight, so I'll
post those another time. But it was so good and so easy and decided to
make another one just now, and its already gone, I ATE IT!!!

forget to tell you, I didn't have bakers cocoa but I had hot chocolate mix so I used
that, and I didn't have milk so I used water, but I figured with the hot chocolate
mix its designed to use with water cause its made with powered milk. But it all
worked out. I did have chocolate chips though and they were little tiny ones, I
sprinkled them on the top the second time around so they floated down as it
cooked. The first time they sort of sunk to the bottom.

vanilla flavoring, comes in a bottle and you find it over by the spices at the
grocery store. The real stuff can be expensive like $4 for a little bottle but
the imitation is usually about 99 cents. I had the imitation.

This is scary and sounds absolutely perfect for tonight as I have everything except the chips--figure nuts will work just as well. Now I don't have to walk to a store somewhere here in Tucumcari, NM for ice cream.

when I run out of chips, (cause I keep snacking on them) I'll just get a hershey bar
and shave a little off with the potato peeler

Okay, I made it tonight - even walked a mile or so each way to find a supermarket on Route 66 in Tucumcari, NM. Got some Hershey's Dark Chocolate Chips. The cake was easy and delicious. Even had a gray cat that wanted to share, but I ate it all. Yep, dangerous all right. :D

I need to find a way to make this without flour lol - as I don't keep it in the rv. Wonder if they have any really, really small bags of flour? Going to have to check - as from the first time I looked at this, I thought what a great treat. I'd have to substitute Splenda for sugar (don't buy sugar either) - and I love the idea of the hot cocoa mix and water- as I don't have milk here either - geez - lol, don't you love how I change things?

Yes Beth, they make a small bag of flour. I made this cake but at 3 minutes didn't look done so I cooked it longer and it was REALLY hard. Will try again and stick to the 3 minutes. I, too, use Splenda. Have been looking for the "canned milk" and of course, Walmart doesn't carry it. Will try HEB and Albertsons.

I found a "little" bag of flour at my store, cost me like 87 cents, opened it
carefully at the top, then put it in a ziplock and stored it in the fridge, fits
right in the door shelf.

I looked for the shelf milk at two stores here so far, didn't even try Wal-mart as I didn't expect them to have it - will try the HEB plus when I go there next. But I do have powdered milk - which would work for this.

A friend of mine sent me this cake-in-a-mug recipe a while ago, and I stashed it! Now that I have it again, I intend to give it a try!

I will use canned milk, (I LOVE canned milk, and can use it in many other recipes, too) eggbeaters, real vanilla, real shaved baking chocolate (I don't much like cocoa), Splenda, Olive oil, cake flour, and a nice mug! OH YES.....and I will add some dark chocolate chips, too!

This will be my treat to myself for this weekend!

Will let you all know how it turns out!

Happy travels!

That old sweet tooth got the better of me tonight so I made this cake again. This time I actually had a coffee mug and all the ingredients, except chips. However, I read the Taste of Home comments before making it and someone suggested mixing all the dry ingredients together, then all the wet ingredients together, then mixing everything together in the mug. Recipe didn't say anything, but don't grease the mug since the batter needs something to stick to to rise above the top of the mug. This time the cake turned out beautifully--tender, moist, and delicious. I've eaten half--waiting for the other half to cool. No virtue here - no siree!
