Butta Soup

History of...hubby's grandparents on hubbies side escaped out of Russia in 1922. They were Russian German Mennonites. She taught hubby's mom who taught me this recipe...hope you enjoy

2 cubes butter (margerine is a NO NO)
1 whole onion chopped
8 - 10 potatoes peeled, chopped into cubes
1 lg bag of wide egg noodles (homemade ones are the best; use enough if homemade to feed 6+ people)
2 cups milk
water
salt, pepper to taste (hubby likes me to use garlic pepper or add a couple tsps of minced garlic

1. melt one cube butter in soup pan
2. saute onions till tender
3. add cubed potatoes and seasonings
4. add milk, stirring thoroughly
5. add second cube of butter
6. add enough water to cover potatoes and let simmer for about 45 minutes
7. then add noodles and cook till noodles are tender

If not thick enough for your liking add a little corn starch mixed with water to thicken

Now we serve this with homemade biscuits or zweibach (double decker rolls) with lots of butter

Like I said - could cause cardiac distress

Do you mean 2 sticks of butter? 1 cup total?

I used to teach in a predominantly German/Russian town and they made Knoephla Soup that was very similar to this. Only noodles were more like little dumplings. It always amazed me that when the school lunch program served both chili and Knoephla for lunch that most of the kids would take the Knoephla soup...but the school cook could make a mean batch of it.

Oops, guess I missed your question...yes 2 cubes of butter or 1 cup. I wish it wasn't so darn hot here or I would make some Butta soup...it is one of Ron's favorites and with him being sick this past week it might have perked him up a little.
