Made these for the first time this morning...they are really awesome.

Bran Muffins

Oven 375

In a small bowl mix together and let set until soggy:
3 cups of Grapenuts or store brand equivalent
2 cups of buttermilk (I used the powdered)

Medium bowl beat together until smooth:
2/3 cup oil
1 1/3 cup brown sugar
2 eggs
2 tsp vanilla

Large bowl mix together until well blended:
2 cups of flour
2 tsp baking soda
2 tsp baking powder
1 tsp salt
1 tsp cinnamon (optional)

Pour the cereal mixture into the egg and oil mixture and blend well. Add to the flour mix and stir until moistened.

Add:
1 cup dried cranberries
1 cup toasted chopped pecans
(you can use raisins and walnuts too and I'm thinking that dried cherries and almond would be good too)

Stir just until well distributed in the batter. Spoon batter into muffin pans that have been sprayed with a non-stick cooking spray. Use enough batter to fill to the rim. Bake for 20 minutes or until toothpick comes out clean.

Sounds really good. Too bad I don't cook any more - I want one now.

How muffins will this make? I may see if my SIL would like to try these.

Recipe says the yield is 24 but I had 22. It's a pretty simple recipe to half.
My mind works like lightning...one brilliant flash and it's gone.
