This is a good one too.. and you can sub Sweet Potatoes for Pumpkin..
1/2 cup Bisquick (reduced fat I use)
1 can Libby's Pumpkin (whole pumpkin not the pie filling)
1 can Evaporated Milk.. ( I've used the skim or low fat)
1/2 cup Egg Beaters (or 2 eggs)
3/4 cup Sugar (I used Splenda) or you could us the blend of both
1 TBlsp Butter ( I used I can't believe it's not butter ) stick soften
2 1/2 tsp pumpkin pie spice
1 tsp vanilla
Pinch of Salt (1/8tsp)
Pre heat oven 350...
Put all ingredients in blender or Food processor or use Mixer.. All your choice (difficult decission depending on how tired you are:) )
Process till smooth.. Aaaaaah the hard part.. Pour in Pie plate .. I use a 10 1/2 inch deep one.. Place in oven and bake..50 to 55 min or till knife inserted in center comes out clean.. Let cool top with dollup of low fat cream... It's tasty..
