Breakfast Upside Down Cake

Breakfast Upside-Down Cake

SERVES 8


19 ounces Duncan Hines blueberry muffin mix
1- 1/4 ounces quick-rising yeast * ( 1/4 oz) thanks Mitch :)
8 ounces pineapple slices (drain and reserve juice)
1 egg (beaten)
1/3 cup brown sugar
1/4 cup butter or margarine (melted)



Rinse and drain blueberries from muffin mix; set aside.
Place muffin mix and yeast in a bowl.
Drain pineapple, reserving the juice in a measuring cup. Set pineapple aside. Add
enough water to juice to measure 2/3 cup.
Pour juice into a saucepan; heat to 120-130 degrees.
Add to muffin mix; stir just until moistened.
Beat in the egg. Cover and let rest for 10 minutes.
Combine brown sugar and butter; pour into a greased 9 inch round baking pan.
Cut each pineapple slice in half; arrange over brown sugar mixture.
Tuck cherries into pineapple.Sprinkle with reserved blueberries.
Spread with remaining batter.
Bake at 350 for 40-45 minutes or until a toothpick inserted into cake comes out clean.
Immediately invert onto a serving plate

Janice,

Heating the liquid in this recipe is for the Yeast... so that it will rise slightly... as you mix in the eggs with the warm
liquid then you cover the batter and let it rest...aaaaaaaaah just like a bread thingy...LOL

Makes sense to me .... :o


Any time you add yeast...warm liquids usually are added. yeast won't activate if the liquid is just not warm enough..hence you have dead dough...mmmm oh I'm gonna make a funny now... What happens with dead dough ??? mmmmm guess it hangs around more in your pocket..oh that's awful.. Comdian NOT...

Any way Janice, I hope I made some kind of sense...other than common ...oh I'm going to bed.. seems I'm just full of myself at the moment...

I read through the recipe and said HOLY CRAP - 1.25 oz. (1 1/4) of yeast??? That'll blow up the house! It'll be like an I Love Lucy episode! :)

So, I'm going to guess it's ONE x .25 oz. package of yeast?

I made a similar mistake on another forum about a socket wrench...guy said to get 1 9/16" socket...man, that's a BIG socket. I then realized he meant quantity 1 (one) x 9/16" socket. Luckily, I hadn't tried to buy that mongo socket before I realized the problem.

Sounds delicious. Thanks for sharing!

I believe she ment one package of yeast... That's how she gave me the recipe.. and I'm just going to use 1 packet..

But that would be a neat surprise.. sure wake a few people up.. however, I like the vision of pulling this baby out of the
oven.... omg... keep backing up.. LOL

I loved Lucy too !

I wrote Deb, the gal that gave me the recipe.. and she laughed.. said, she thought I realized it was

No, I don't want you to be like Lucy baking bread...lol It is 1 -1/4 ounces of yeast.
