12 pm bacon
8 cups broccoli (4 bunches)
1/2 cup shallot
1/2 cup roasted sunflower seeds
1/2 cup dried cranberries
1/2 cup shredded cheddar cheese
2/3 cup Greek yogurt
1/3 cup mayonnaise
1/4 cup granulated sugar
4 tablespoons apple cider vinegar
Salt & pepper
Sauté bacon until crisp, 8-10 minutes, drain on paper towel
Toss together bacon, broccoli, shallot, sunflower seeds, cranberries
In small bowl whisk together, yogurt, mayonnaise, sugar, vinegar, 1 tsp salt & 1 tsp pepper
Combine dressing and broccoli, salad can be served at room temperature or chilled. Can be stored in airtight container in fridge for about 5 days
