Scalloped Potatoes For One

INGREDIENTS

1 medium potato peeled and sliced into 1/4 inch slices
1 Tablespoon Butter
1 Tablespoon All-Purpose Flour
1/2 cup Milk
1/2 Cup plus 2 Tablespoon Shredded Cheddar Cheese
1/8 Teaspoon Salt
1/8 Teaspoon Pepper

Instructions

Heat Oven to 375 degrees
Place Potatoes into a 5 inch buttered baking dish
Melt butter over medium heat in a 1 quart saucepan. Stir in flour and cook, stirring constantly for 2 minutes.
Slowly stir in milk. Cook stirring frequently until mixture is smooth and has thickened, 2 minutes.
Stir in 1/2 cup of cheese, salt and pepper and continue stirring until cheese has melted.
Pour over potatoes, place dish on a baking sheet and bake for 25 minutes.
Remove from oven and top with 2 tablespoons of cheese, return to oven and bake for 20 minutes.

This was 2 servings for me. The recipe suggests you could add ham. This recipe came from OneDishKitchen.com. I think it's also on Facebook.

have leftover ham might make scalloped potatoes with it
this does sound good will have to remember it

I make the box scalloped potatoes and end up eating the whole thing in one sitting! So this wouldn't be enough for me but it sounds good! I guess I could make more of it. I am sure it would taste much better than the box stuff! :D
