Quinoa

1 3/4 cup water
1 cup quinoa
Combine, cover and bring to a boil
Reduce heat and simmer 15 minutes
Remove from heat, let sit covered for 10 minutes, fluff with fork
Refrigerate for 3 days or freeze for 3 months

* 1 cup = 8 g protein

I have never tried Quinoa so might have to try it one of these days. I love rice but only eat it sparingly so off to google.

The only time I had Quinoa salad, it didn't have greens in it just a mixture of things lke cucumbers, tomatoes and a vinaigrette dressing. Wish I had asked for the recipe as it was super good!!

Always wash it really well under running water, or Quinoa will be very bitter! I no longer consume any grain, but did eat a lot years ago. It was ok, but not a favorite. I used a fine mesh strainer and running water at sink.

My quinoa is prerinsed. Always good to check the label. :)

I found, even pre-rinsed was not always rinsed enough, and it's so easy to rinse, to make sure not only bitterness, but also manufacturing dust is gone, that it was worth the extra minute to me. But, like I said, I no longer eat any grains or seeds due to their damaging effects on my body.
