Potato Soup

Karen's Potato soup recipe

1 pkg of frozen potatoes O'brien
1- 32 Oz Chicken stock
1 pkg Country gravy mix

Put in pot till comes to a boil then simmered ( stirring often ) 30 min
Then turned off stove let set for 30 min.
Added bacon and shredded cheddar cheese as topping.

I am making that his weekend, finally found a store here that carries Potatoes O'Brien Walmart LOL

I shared this recipe with a friend of mine and she made it today... but she called saying it was very thick and wondered if she used too much potatoes so my question is to those who have made this soup what might have been the problem??? I remember it being thick but not overly so...
told her to thin it down a bit but wondering what might have caused it

Sheila, other than bringing it up to a boil, you don't want it to boil after and stir often. I like thicker potato soup so cook mine until it gets thicker. She probably just needed to take it off the heat sooner. But it's easy to add liquid if you go too thick for your taste.

The second day I added some more chicken broth to thin it a bit and it was perfect as I like my soup thicker also.

I think that is what happened she couldn't get the flame low enough to have just a simmer so stirred it a lot :lol: so probably thickened it ...
