Quesadilla (El Salvador)

Obviously, this is a dessert and totally different from the quesadilla better known in the U.S.

Preheat oven to 350°
8”x 8” pan - lightly wipe with oil and dust with flour

Mix all ingredients together EXCEPT for sesame seeds

1 1/2 C Bisquick
1/2 C Farina (Original Cream of Wheat - not instant)
1 egg
1 C milk
1 C sugar
8 T Parmesan cheese
6 oz. melted butter
Pour into pan and sprinkle the top with sesame seeds

Bake at 350° for 33 minutes. Time can vary slightly since ovens vary. Test the center with a toothpick. Should come out clean.

I'd probably like this.. but don't own sugar. (We don't talk about the sugar in things I shouldn't eat lol)

All I can say is this is definitely a dessert. Give it a try. So easy to make. Just put all (except sesame seeds) in a bowl, stir, pour into the pan, top with sesame seeds and bake.

I was taught how to make pupusas by my mother-in-law. However, I haven’t made them for over 25 years because that’s how long I’ve lived alone and I don’t cook for myself. My daughter asked for the recipe last summer and I had to explain I never wrote it down and wouldn’t trust my memory at this point. She ended up looking on the Internet, there were complete instructions and they came out really good. Maybe you could try that. I especially liked them with the cheese or pork filling with cortido (“pickled” cabbage slaw). Sorry I’m not of more help. Now I’m hungry for pupusas!
