Mac & Blue & Cheddar Cheese

Okay....I'm a "dump" cook....don't do much measuring....mostly the "that looks good to me or that tastes about right" type of cook. But was watching one of those compitition shows on the Food Network the other night and one of the cooks used Blue cheese in her Mac & Cheese.....So I decided to run with it....Had all this cheese hanging around....a little pepper-swiss, some New York Cheddar spread and a good hunk of Blue Cheese...that was getting bluer.... cooked large macaroni til done.....then made my sauce of butter, milk ...warming it to where the cheese would melt....after it melted, use about 2 T of corn starch with a little water and used it to thicken it...mixed the ronies and cheese sauce....poured it in my 9 X 9 pan...covered it with Italian bread crumbs and baked it for 30 minutes at 350 F....It turned out great!!! ;)

That sounds good. My kind of cooking too - sorta throw in whatever you've got at the time mood strikes yo to cook rather than eat out.
The only major handicap in life is a bad attitude!
