Cowboy Cookies

This is a recipe that I made up from several versions of Cowboy Cookies. They usually call for chocolate chips but I try not to eat chocolate so I use toffee pieces.

1 Cup White Sugar
1 Cup Brown Sugar
1/2 Cup Butter Flavor Crisco Shortening
1/2 Cup Butter(1 stick)
2 Eggs
1 Tsp. Vanilla
2 Cups All-Purpose Flour
2 Tsp. Baking Soda
1/2 Tsp. Salt
2 Cups Old Fashioned Oats
2 Cups Crushed Frosted Flakes Cereal
1 Cup Chopped Pecans
1 Cup Toffee Bits

Cream together sugars, butter and shortening. Add eggs and vanilla and mix. Sift flour, baking soda and salt together and gradually add to mix. By hand, stir in oats, cereal, pecans and toffee bits. I use a 1 inch scoop and put on wax or parchment paper on a cookie sheet. Bake at 325 degrees for 15 minutes.

I think the next time I make some I might try 1 cup of butter and not use the crisco. This is the only recipe I use crisco in and I usually end up throwing some of it away because it gets old. If I do I'll let you know how that works.
