Lengua de gato cookies

First of all, there are a multitude of recipes on the internet for these. I've played & played with them & came up with the first recipe. Then the aunt of one of my co-workers from Peru gave me the second recipe. The first one has the texture of the Bolivian ones, the second has the flavor. You can choose your sweetness level & use the appropriate recipe.

After the recipe, I've added links to a couple of videos which show how to make them.

Lenguas de gato cookie recipe (sweeter recipe)
(this is the recipe that Carolb is talking about)


1 cup butter (2 sticks) room temp
1 1/2 cup extra-fine sugar
1/2 cup egg white (4 eggs) room temp (1 whole & 2 whites - works too)
1 1/2 cups flour (shift as you put it into the mixture)
2 teaspoons vanilla
1/2 teaspoon salt

Cream the butter well
Add the sugar slowly & cream again until soft & fluffy (a couple of minutes)
Add egg whites gradually, beating well after each addition - beat another couple of minutes
Add the salt & vanilla - beat in
Add flour gradually & mix well (I stirred this in so I wouldn’t over beat it)
Put dough in a piping tube
(I use the Wilton's dessert maker with the decorator 4b tip)
Pipe onto parchment paper on cookie sheet (make cookies 2-3 " long)
(A consistent size helps them cook more uniformly)
Bake at 350 for 9-11 minutes (depends on size) or until edges start to brown
Remove & let cool on cookie sheet for a few minutes then transfer to cookie rack
Cook & store in airtight containers or in freezer

Lengua de gato (Peruvian recipe - not as sweet)
This recipe is nice if you don’t want super sweet cookies - these are perfect with coffee or tea - anytime - I actually beat this recipe similar to the above one making the cookies light & quicker to bake than mentioned below. You can also just stir all the ingredients but it makes a heavier cookie which will take longer to bake.

125 grams butter, at room temp
125 grams powered sugar
125 grams all purpose flour
3 egg whites
1tsp vanilla

Preheat oven to 350
Beat butter & powdered sugar
Add vanilla
Add egg whites 1 at a time, beat after each
Add flour, combine

Place mixture into piping bag
Pipe onto baking sheet lined with parchment paper
Leave space in between because they will flatten as they bake
Bake 20-25 (this is usually too long but depends on how thick they are) - until edges start to brown.
