Corn Casserole

CORN CASSEROLE

One stick margarine or butter, melted
15oz can kernel style corn (do not drain)
15oz can cream style corn
8 oz sour cream
1 box Jiffy corn muffin mix

Preheat oven to 350 degrees.
Combine all ingredients and pour into a greased two quart casserole dish.
Let bake for one hour or until golden.

Let cool 10 minutes before serving.

I've used frozen corn without including the cream corn....with cream cheese. :)

Guess I gotta see if I can find a gluten free corn bread because this sounds interesting!

I have made this many times! Very easy to make and is SO yummy!

My version:
1 can corn
1 can creamed corn
Jiffy Cornbread mix
1 cup sour cream
1/4 cup butter
2 eggs
1 tbsp. sugar

Anybody ever tried this in a crockpot? I realize that the top won't get golden...or would I be better off making it before hand and heating it up in the microwave? I know that I'm going to be short on oven space. Suppose I could cook some things out in the 5er....but it's such a pain to run back and forth. Although on second thought I might enjoy the solitude I'd have for a few minutes.

I've had this before, and its really good. One of the ladies at work made some for a potluck and it was totally
consumed!

have made this as well or a version of it
Pat saw something the other day that might help
don't think it was meant to cook but to keep things hot
hmm take out all the racks except the lowest one put it on the lowest space
then take your heaviest casserole put it in oven put a cookie sheet on top of it then another casserole
top it with another cookie sheet then a casserole could depending upon the size of casseroles put two in each "cookie sheet"
looked really smart but says I where was the turkey at???

With thought of making this for Christmas dinner at my Sister in law's house, I tried it last night. WOW!!! Neither of us could stop eating it, was sooooo good! Will definitely make this to bring to SIL's. DH said it tastes a little bit like polenta. I said then your family will love it because they were raised on polenta!

I made it for Thanksgiving but I don't think mine got baked long enough. I had too many things in the oven needing different temperatures. I read on one recipe I looked up that to reheat it you could slice it and fry it. That's what I did and that is really good.

Mine had to cook about 15 min. longer too, Martha, but did get brown on top. We slice cold polenta and fry it up to serve with butter and syrup. DH said the corn casserole tasted a lot like polenta. I didn't know I could do the same with the casserole, next time I'll try it.

Made the corn casserole today. Pretty good but it needed something , may try some sharp cheese next time,?
