Strawberry-Rhubarb Refrigerator Jam

Refrigerator Jam – Strawberry-Rhubarb
Sugar Free – Pectin Free

1 1/3 cup strawberries - raw
2/3 cup rhubarb - raw
2 T raw honey (or to taste)
2 T Chia Seeds

Process all ingredients in a blender and refrigerate overnight.
Add additional diced fruit if you like it junky.

I'm not a big fan of rhubarb so made this without it, adjusting the honey down by 1/2 and chia seeds down a little. It's delicious. Now I have to find healthy things to eat with it!

This is so good. I used 2 cups of strawberries, no rhubarb and only 1 T of honey. It came out like a fruit spread. Definitely worth making.

Sounds good and I love rhubarb! I grew up eating rhubarb sauce for breakfast with toast!

Is it supposed to be raw rhubarb? I grew up eating cooked rhubarb. We grew it in our garden.

I love Google - I found the original poster of the recipe online and it specifically says RAW.
I'm going to go in and edit the recipe to clarify that.
