Slow Cooker Pork Chops with Apples & Sweet Potatoes

I made this today...it came out good. Made from fresh, didn't freeze, but the website gives you recipes that can be assembled and frozen ahead.

Slow Cooker Pork Chops with Apples & Sweet Potatoes
Yield – 4 servings
Preparation Time – 10 minutes
Cooking Time - 8 hours in slow cooker
Ingredients
4 pork chops
2-3 sweet potatoes, peeled and quartered
3 apples, peeled and sliced
½ onion, diced
¼ cup brown sugar
3 Tbsp balsamic vinegar (optional)
Salt and pepper
Directions
Assembly Instructions: Add all ingredients to the pack, in the order they were listed. Remove as much air as you can or vacuum seal the pack. Freeze up to 6 months in a refrigerator freezer, or 12 months in a deep freezer.
Cooking Instructions: Thaw the slow cooker pack in the refrigerator overnight, or in a bowl of warm water for about 30 minutes. If the pack is partially thawed, cook on low for 8-10 hours. If the pack is completely thawed, you can cook on high for 6 hours or low for 8 hours.
Side dish suggestion: I would serve this with some brown rice or warm bread.

Sounds very yummy. I don't have a slow cooker in my rv but I might just get a small one to make this recipe! Love anything with sweet potatoes and apples!

That sounds great. Since I don't own sugar, I might try it leaving it out.

I bet it would be just as good without sugar. Apples and sweet potatoes add their own sweetness.

Sarah, you picked up on the do-ablility of this right away...and you are correct. I do have trouble cooking in the crock pot for one though. Guess if I was prepared to eat left overs for a day or two.... :)

Nothing wrong with leftovers...it's another meal you don't have to cook. But you do have to peel the apples and sweet potatoes though.

If you don't want left overs too many days straight, directions say it freezes well. I don't mind the left over route and I am prone to tossing things in freezer and forgetting them until way too late to try to eat whatever it was. :oops:

There are some small crockpots you could easily put half this recipe in I think. Gotta go get ingredients and try.

sounds really yummy..out in boondocking land it's hard to do the crock pot or assume as it runs for so long but bet it would
work out in the oven as well just a thought

Tried this recipe tonight and it was delicious! I substituted butternut squash for the sweet potatoes just because that's what I have on hand and it turned out great. The pork chops were so tender they almost melt in your mouth. 10 thumbs up on this Liz! Thanks!
