Bacon cookies

Bacon cookies

Sarah asked me for the recipe for the "bacon cookies" my friend Carrie made for the KS gtg. Here ya go!


Short Stack Cookies
Ingredients
•1 1/2 cups melted butter
•2 cups white sugar
•2 large eggs, beaten
•1/2 cup maple syrup
•2 teaspoons baking soda
•1 teaspoon salt
•1 teaspoon vanilla
•4 cups all-purpose flour (pack it down in the cup)
•1/2 cup white sugar for coating dough balls
•4 pkgs of real bacon bits

Steps
1.Melt the butter then mix in the sugar. Set the bowl aside on the counter to cool to room temp.
2.Once the mix is cool, add eggs. Mix everthing thoroughly. Mix in the maple syrup, baking soda, salt, and vanilla.
3.Add flour in one cup increments, mixing after each addition.
4.Chill the dough for at least 2 hours before baking. (overnight is fine too)
5.When your ready to bake preheat oven to 350
6.Mix sugar and bacon bits in a bowl. You will use this to coat the dough balls
7.Roll the dough into walnut sized balls and then roll them in sugar mix. Then place on a well greased cookie sheet (or I used parchment paper on cookie sheet, less clean-up) 12 cookies to a standard sheet.
8.Flatten the balls with metal spatula or hands.
9.Bake cookies at 350 for 10 to 12 min or until nicely browned.
10.Take the cookies out of the oven, cool them on the sheet for 2 min then remove to cooling rack. ( If you leave them on the sheet for too long they will stick)

What size are the packages of bacon bits? I buy mine at Sam's and I'm pretty sure they would be too much.

I need to start trying recipes like this using the gluten free flour I bought and put in freezer. Surprisingly I checked and the GF flour does not turn into cookies while sitting in my freezer by itself. ROTFLOL These sound like they would make great breakfast cookies for a rv trip.bowl of fruit, maybe scrabbled eggs and a bacon cookie. Yum.

Martha, I checked with Carrie and she said she just used the packages that she got at Walmart. She thinks they might be around 2 ounces? Hope this helps.

Sharon and Sandi, I don't know why you didn't get to sample the cookies. We had them when we were all sitting around Sarah's site and visiting, I thought you were there?

There's such a thing as to much bacon?? :o Not in my house!! :D

Not at my house either. We can go through one of the 20 oz bags of bacon bits from Sam's pretty fast. I might try making some to bring to Fort Worth if I can get them out of the house.
