I love risotto, my girlfriend from high schools mother used to make it for me. I can remember watching her make it but never tried it, seems like she put some tomato paste in toward the end and I believe some meat.
I've decided that I definitely want to visit you if I ever make it out west Judi!!

Sounds like your friend's Mom made her risotto the way I learned to from my DH's Italian grandmother. We use tomato paste and meat in ours, too.
Any day spent in the company of my animals is a good day.
