Quick V 8 Gazpacho ala Velda

I used my mighty Vitamix, but use what blender you have. You could cut veg pieces smaller to get it going if your blender has trouble with chunks. I had veggies like celery cleaned, cut in half stalks to fit in ziplock, onion peeled, etc in my van fridge, both to save space and time.
Vary amounts to taste but here is approximate. Makes about 2 to 3 cups depending on how generous with veggies.

1 -12 oz can low salt V8 , low salt so you can adjust taste
4 to 5 cherry tomatoes or one larger tomato
Red onion 1/4 in slice
Chunk of cucumber ( I used the English thin skin type I get at Costco which I don't peel)
1/2 clove garlic
1 half stalk celery
2 to 3 baby carrots
1/8 to 1/4 red bell pepper
Few branches of parsley
Few branches cilantro
Dash Worcestershire
1 to 2 tbsp red wine vinegar
1 to 2 tbsp medium salsa or mild if you don't like heat
1 tbsp olive oil
Salt to taste but I didn't need any
Pulse blender to get to thick with a little texture but drinkable
I served in a mug and followed with a light supper. It hit the spot ESP on those days which had been 90 to 100!
