cook only a quarter of the receipe for one meal.. or half it for leftovers. Not difficult to cook for one. Mind over matter you know.

Made this for my New Years Day dinner. Excellent - some of the best chops I've made in a long time.

When making a recipe for the first time, I don't usually change anything, however I added a few things that were on hand. My additions were 1/4 head of small cabbage, large clove of elephant garlic and some fresh cranberries. Plenty of left overs. Next time I will only make half, I think.

I had a doctor's appointment so I put this in the crockpot before I left. I will be making this again, we both like it. Walmart only had the paper thin pork chops or 2 thick ones. I used the thick pork chops.

I made this yesterday and was very good! DH liked it too. But next time I'm going to have reduce the cooking time. The apples and sweet potatoes were close to mush. I started it at 12:30 on high. It was done by 4:30. So either my crock pot runs hot or I don't know what. I definitely know that there is no way I can start this before work for supper.

I didn't have the mushy veggie problem but I was lazy and left them in very big pieces. My crock pot is probably 30+ years old; that could also make difference.

My crockpot must not cook all that hot either. I used thick pork chops both times. I could see where thin ones might cook to pieces. I left it on warm for a while after we ate and the leftovers got a little mushy. We like this recipe so much. I think next time I might try it with the pork fingers or boneless pork ribs. They call it different names in different places. The strips of pork meat.

Well I fixed this one evening, half a recipe. Did not have brown sugar, so I used molasses, didn't have the balsamic vinegar so used some wine that was opened. It came out so tender and tasty, I did it again. This time no wine cuz I had the balsamic vinegar. Like the wine better, Cab Lucky Duck. May do it again.

I used Apple cider instead of balsamic vinegar the first time I made it. Worked for me.
